Yummy Garlic Chicken: A Perfect Meal For Students.

All of us students at one point or another struggle with eating something that is A) Nutritions, B) Not too heavy on the stomach, C) Quick to make and D) Cheap! Here's a crunchy little recipe that'll solve all these problems in 25 minutes!

You'll need:
1 Tbsp plain flour
3 Cloves of garlic (or your preferred amount, I love the garlic!)
4 Water crackers
1 1/2 tbsp of butter
4 Sprigs of parsley
1 Pinch of salt
1 Pinch of black pepper
1 Free range egg
1 Chicken breast fillet

A few baby potatoes, or any side as your choice. Vegetables would be great!

STEP 1: Wash and put your vegetables on to boil, potatoes take around 25 minutes.

STEP 2: While your potatoes are cooking, use this time to prepare the crunchy seasoning for your chicken. Add the crackers, butter, parsley, garlic, salt, and pepper to your blender and blend away until you've reached your required consistency. I blended mine so that the crackers weren't totally broken up because I love crunchy food!

STEP 3: Put your blended mixture on to a plate, whisk the egg in a bowl, and sprinkle the flower over another plate to prepare your chicken. With the clean chicken breast, coat it first in flour, then egg and finally massage the crunchy mixture into the chicken all over until you're satisfied. Oh, and don't forget to score your chicken beforehand!

STEP 4: Carefully place the chicken breast onto a sheet of foil on an oven tray. Preheat the oven to 240 degrees and bake for 25 minutes, or a little longer if you like it to be crispy and a little burnt, that's how I prefer it!

STEP 5: Once your veg and chicken is cooked, serve and enjoy. Add some more parsley to the top for a finishing touch!

Have  you tried this recipe before? How did you like it? Have you got any quick student meal ideas?
